These sourdough discard cosmic brownies add a fun homemade twist to one of my favorite childhood treats.
Brownie Ingredients:
- 1/2 cup unsalted butter
- 1 1/4 cups semisweet chocolate chips
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup flour
- 1/2 tsp salt
- 110g (about 1/2 cup) sourdough discard
- 2 eggs
- 1 tsp vanilla extract
Ganache ingredients:
- 4 oz semisweet chocolate chips
- 1/2 cup heavy whipping cream

Brownies:
Preheat oven to 350F and line an 8×8 baking dish with parchment paper. In a small saucepan, melt together chocolate chips and butter on medium to low heat. Turn off heat when melted, do not overcook. In a large mixing bowl, whisk together flour, sugars, salt, and cocoa powder. Pour melted butter and chocolate over the dry ingredients and mix together. Add the eggs, sourdough discard, and vanilla extract and mix everything together until completely combined. Pour into baking dish and bake for 35-40 minutes, or until toothpick stuck into middle comes out clean.
Ganache:
Put chocolate chips into a heat safe bowl. Heat heavy whipping cream in a small saucepan on low to medium heat until it just starts to simmer. Then pour over chocolate chips and cover. After 5 minutes remove cover and stir together until all chips are melted into whipping cream and completely combined. Cool at room temp for at least 15 minutes before spreading on to cooled brownies. Top with candy coated chocolate chips.
