Sourdough Discard Oatmeal Chocolate Chip & Marshmallow Cookies Recipe

Ingredients:
  • 8 tbsp softened or slightly melted unsalted butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 100g sourdough discard (about 1/2 cup)
  • 1 egg
  • 1 tsp vanilla extract
  • 160g old fashioned rolled oats (about 2 cups)
  • 120g AP flour (about 1 cup)
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2-3/4 cup chocolate chips (to preference, plus extra for topping)
  • 1/4-1/2 cups dehydrated marshmallows (to preference, plus extra for topping)

Preheat oven to 350F with rack in center. In a mixing bowl, combine chocolate chips, oats, flour, salt, cinnamon, and baking soda. In a separate mixing bowl add sugars and butter and mix together until sugars start to dissolve into butter. Add sourdough discard, egg, and vanilla extract and mix together until smooth. Add the dry ingredients to the wet ingredients bowl, and fold together until just combines. Add the dehydrated marshmallows and fold them in.

Using a 1 tbsp cookies scoop, scoop dough rounds and place ~1.5-2″ apart on a parchment paper lined baking sheet. Bake for 7-19 minutes, or until edges start to turn golden brown. Remove from oven, and add additional chocolate chips and marshmallows to top if desired. Then carefully transfer to a cooling rack to cool completely.
