Homemade Sourdough Discard Pop Tart Recipe

Ingredients:

Crust
  • 125g AP flour
  • 1/2 tsp fine kosher salt/fine sea salt
  • 1/2 tsp granulated sugar
  • 8 tbsp unsalted butter, cold
  • 125g sourdough discard
  • 1-2 tbsp ice water as needed
Filling
Icing

In a medium bowl, whisk together your flour, salt, and sugar. In a large bowl, use a cheese grater to grate your butter. Add the flour mixture to the butter and toss together with a fork until all butter is coated and separated. Use a bench scraper to cut the mixture together until it forms large crumbles.

Then add your sourdough discard and continue to cut in until the mixture is crumbly. Then switch to using your hands to press and knead the dough together until it forms a thick, smooth dough ball. If it isn’t coming together, you can add ice water 1 tbsp at a time and continue working the dough with your hands.

Once it all comes together, form it into a disk about 1″ thick, and wrap tightly in plastic wrap. Chill in the refrigerator for at least 2 hours.

Preheat your oven to 350F, and line a baking sheet with parchment paper. Place the dough disk on a lightly floured surface. Roll it out into a large rectangle about 1/8″ thick. Trim the edges to make them straight and even.

Cut the dough into 8 even sized rectangles. Place 4 of the rectangles on to your baking sheet. Add a spoonful of your jam or preserve to each of those rectangles, and spread it leaving some space around the edges to press together. Place the remaining 4 rectangles on top of the others. Press the edges together gently with a fork, and use your fork to poke a couple of holes in the top of each pop tart.

Bake for 20-25 minutes, until starting to brown on the edges.

Once the pop tarts are done baking, transfer to a cooling rack. While they are cooling, mix your powdered sugar and milk together. Add coloring if desired. When they are completely cool, add icing and sprinkles, and then let the icing set.
