Sourdough Discard Pop-Tart Sugar Cookie Recipe

Ingredients:
  • 270g AP flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp kosher salt
  • 16 tbsp (2 sticks) unsalted butter, softened to room temp
  • 1 1/2 cup granulated sugar
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 100g sourdough discard
  • Red sanding sugar sprinkles (or whatever color matches your pop-tarts)
  • 4 Pop-tarts (whatever flavor you’d like), roughly chopped

In a medium bowl, whisk together your flour, baking powder, baking soda, and salt.

In a large bowl, use a hand mixer or whisk/spoon to beat together the sugar and butter until fluffy. Then add the egg yolks and vanilla and mix until completely incorporated. Then add the sourdough discard and mix until just combined.

Add your flour mix to your wet ingredients. Mix/fold together until just combined. Add most of your pop-tarts, reserving some pieces for topping. Fold them into the dough.

Using a 1 tbsp scoop, make dough balls and roll them in your sanding sugar. place your dough balls on a parchment paper lined baking sheet. Chill in the fridge while your oven pre-heats.

Preheat your oven to 350F. Bake for 8-10 minutes until tops just start to look set.
